-1 Bottle of Jerk Seasoning (Grace's or Ocho Rios)
-1 Whole Pineapple
-1 bag of Brown sugar
-1 bottleSoy Sauce
-1 small jar of Minced Garlic
-1 small bottles Apple Cider Vinegar
-In a mixing bowl combine 1/2 a cup each of jerk seasoning, brown sugar, soy sauce, and apple cider vinegar. Add 4 tblsp on minced garlic and half of the pineapple cored and chopped. Mix well and pour over ham, insuring marinade gets in between slices. Cover with foil and bake according to package directions, usually 400 degrees, 10-12 mins per pound. Uncover ham for the last 10-15mins to let brown. Once ham is done you can garnish the ham with the remaining pineapple chunks and serve.
Mac N Cheese (Large Pan/ Family Size)
-2 boxes Cavatapi Noodles or Large Elbow
-8 cup bag Velvetta Shreds
-8 cup bag Mild Cheddar
-4 cups Sharp Cheddar
-1 Qt of Half & half
-1 Qt of Heavy Whipping Cream
-Salt & Pepper
-Bring large stock pot to boil, heavily salt the water. Boil pasta to al dente and remove from water and set aside. Butter pan along the sides and bottom. In a bowl wisk both quarts of heavy whipping cream and half & half, 8 eggs, 1 teaspoon of nutmeg, 1 tblsp of salt and pepper. Begin to layer the pasta in the buttered pan adding a blend of cheeses and some of the cream mixture, continue to layer noodles, cheese and cream until pan is full, reserve some cheese to cover the very top of the casserole. Loosely cover the mac n' cheese with foil bake on 350 degrees for 40 mins, remove foil and let brown for a remaining 15 mins. Remove mac n' cheese from the oven let sit and cool, sprinkle with paprika, dried parsley and serve.
Green Bean Casserole (Large Pan/Family Size)
-Fresh Green beans 5lbs or 6 cans of Can Green Beans
-2 packs Fresh Button Mushrooms
-1 QT of Heavy whipping Cream
-1 pack of Thyme
-1 small jar of Minced Garlic
-Salt & Pepper, garlic powder
-1 large onion
-Heat oil in pan enough to fry onion rings.
-Slice onion 1/4 inch thick, dust in a flour mix with salt, pepper and garlic powder, fry until golden brown, remove and place on paper towels to keep crispy.
-In a saute pan melt 1 stick of butter add 1/4 of minced garlic about the whole small jar. let garlic brown slightly, chop mushrooms close to two packages add to pan. Add a couple of springs of thyme chopping finely. Once mushrooms have sauteed down add 3/4 cups of flour, stir until clumps begin to form. Add whole carton of heavy whipping cream slowly as you wisk into the mixture. continue to add cream and wisk until a creamy consistency forms. Allow cream to cook for about 5-10 mins to cook out the flour taste, add salt and pepper to taste. Mix the mushroom cream sauce into the pan of green beans, cover and bake at 375 degrees for 30 mins. Remove from oven and garnish with crispy onions and serve.
Easter Dyed Deviled Eggs
Directions (A dozen)
-Boil eggs in a large pot with water and vinegar to help with peeling the shell later. Boil for 15 mins remove and let cool. Take each egg and tap all around with the back of a knife or spoon to make the shell crack but do not remove. Place crackled eggs in individual bowls of water and add drops of food coloring to each bowl for different colors. Let eggs remain in dye over night, peel next day and begin to make filling.
Slice eggs in half lengthwise, remove yolk and set aside in a bowl. Add 1 cup of miracle whip and 1/4 cup of mustard and 1/4 cup of sugar, mix until smooth. If not smooth enough add more miracle whip. Once mixture is to liking add to pipping bag and pipe mixture into each egg. Garnish with paprika and serve
Sweet Potato Cornbread Cupcakes
-3 sweet Potatoes
-3 boxes of Jiffy
-1/2 gallon of milk
-cinnamon, nutmeg, vanilla extract
Directions (family size)
-Boil sweet potatoes until completely tender, remove from water and peel skin. Add half a stick of butter and milk until creamy "icing" like consistency add cinnamon, sugar, nutmeg to taste add to pipping bag and set aside.
-Make cornbread according to package, add to muffin cups and bake once done allow to cool. Begin to ice each muffin with sweet potato and garnish with pecan pieces and serve.
